Happy New Year, time to catch up on recipes/posts/ideas that accumulated over the holidays. Going to start of with a simple one. Pulled from Tom Colicchio's 'wichcraft, a sandwich with julienned yellow beets, avocado, grapefruit, radish and alfalfa sprouts, lemon juice and a drizzle of olive oil on crust-less Pullman bread. Put this one together because both beets and grapefruit came in my Farmhouse Delivery crate, and it was so different than anything I usually eat.
The verdict? Shockingly good! The avocado mellows the bitterness of the grapefruit, and the beets provide a nice crunch to the sandwich. When julienned and tossed with olive oil and lemon juice, their natural earthiness is mellowed, and instead of tasting like a mouthful of dirt, they add a smooth bass note to the sandwich. I think this would work very well as a canapé; as is it's a very light lunch. Dainty, if you will.
