Macaroons are quite possibly my favorite confection. I tend to love all things almond when it comes to dessert. This recipe has been on my to do list for quite some time. Yet I never found the time to make it, knowing that like all other Thomas Keller recipes, it would be meticulous and intricate. In other words, every pan in my kitchen would be dirty by the end of the recipe and it would take at least 4 hours to make. But lo and behold, with my wife out of town, I had enough time to turn the kitchen into a complete disaster and bake cookies until midnight.
