Last bushel from Farmhouse Delivery contained, amongst other things, 4 ears of corn and a bunch of what appeared to be oversized scallions. I would call them spring onions, but it's not exactly spring. Had a few tomatoes, jalapeños, and an avocado lying around, picked up a rotisserie chicken, and dinner came together quite nicely. Corn cakes with corn relish, sliced avocado, chicken and sour cream. Basically, the corn cakes are simply fresh corn, flour, cornmeal, egg, the tops from the "scallions", milk, butter and a little cheese. The relish is diced tomato, corn, minced jalapeño and the white part of the "scallions", tossed in a mustard vinaigrette that I pulled from Ad Hoc at Home. Like Hannibal, I love it when a plan comes together.
